Mini Cheesy Potatoes

Makes 24 mini jackets
Ingredients
- 12 x small salad-sized potatoes
- 1 x tube of
Light Cheese Spread
- Fresh chives to decorate
Method
- Pre-heat oven to 200ºC/400ºF/Gas mark 6
- Wash the potatoes then prick them with a fork
- Arrange on a baking tray & bake in the oven for approximately 35 minutes or until soft inside
- Allow the potatoes to cool for 5-10 minutes
- Roughly chop the fresh chives
- With a sharp knife cut each potato in half lengthways & arrange in a serving dish
- Swirl a portion of Primula Light Cheese Spread on the top of each
- Sprinkle a pinch of chopped chives onto each & serve
